What's for breakfast

I don't know about you but I just LOVE breakfast. Biscuits, pancakes, waffles, coffee, - you name it - I love breakfast! Except for during the week. Isn't that just odd? Well for some reason, during the work week I just can never eat breakfast. Maybe it's because I get up at 530am. With that being said, I am trying to find some healthy breakfast ideas that will fill me up so my stomach wont be grumbling in my 8am patients ear! Some of these ideas I have tried before and love, and others I am just now discovering and will hopefully make this week to try. Like I said, my stomach tends to start growling around the time I sit my first patient down at 8am so I am on the hunt for foods that will keep me full longer.

I found this recipe via pinterest and this look perfect for a busy morning. You can use rice cakes or toast and it will still turn out great. I love good fresh fruit in the morning and of course adding any form of nut butter is even better.

I have a friend who raves about the tone it up community and the wonders they do for women. I really like how Karena and Katrina encourage their members and have easy and attainable workouts that can be done just about anywhere. I really like the sound of this recipe. While I am not a TIU member and I do not have the perfect fit protein powder, I am going to do some research of what powder I can use because these look too good to pass up.

Oh how I love this recipe from oh she glows. It is so simple to make and since you make it the night before, it's ready for you first thing in the morning. Now I dont make a vegan version, you most definitely can. I also don't use the chia seeds (as I can never find them when I want them!) but you can most definitely make it your own. I love to add the peanut butter in the first stage and instead of using maple syrup I like to use honey. Make it your own and love it!

This breakfast is an easy one, finding the right yogurt is the hard part. I love yogurt but at the same time I get bored of it before I can eat all the containers. I recently discovered this new Chobani online and I just had to get some. This one is steel cut oats, banana, and maple. I thought I was going to like it more than I did. I personally feel like it was almost too banana-y but thats just me, I am not a huge fan of banana flavor. I bought a different kind so hopefully that one differs in taste. I also bought the new pumpkin pie and apple spice blends so I am looking forward to trying those. What are your go to breakfasts in the morning?

What's for dinner

I don't know about you but I'm pretty adventurous when it comes to my food. I will try just about anything (like haggis while in Scotland or escargot in France) so when my boyfriend suggested that we cook some chicken, I thought why not? Well it's not like this recipe is super hard or adventurous but it's still something I had never done before. Here is our take on a whole roasted chicken.

What you will need:

- 2 mini chickens (about 5 pounds each)

- seasonings (we used Tony's Creole seasoning, Lemon and Pepper, and cayenne pepper)

- olive oil

- sides of your choice


Preparation:

- preheat oven to 350º

- wash the chickens off

- remove entails of chickens

- coat with olive oil inside and out

- sprinkle with seasonings of choice

- place on baking tray and bake for 20 minutes per pound

- temperature should be 165ºf inside

- rest for 15 minutes before serving


Enjoy the final product! I of course forgot to take some final shots of it all plated - that's what happens when you have 5 other hungry people waiting to eat. We made green beans, rice, and a huge caesar salad. This was a simple meal that I hope to make again soon.
